From the Kitchen to the Phin

Our founder, Chef Andy spent nearly a decade in professional kitchens and got really picky about what he eats and drinks.

After nearly a decade working across Modern Vietnamese, Middle Eastern, and Italian cuisines, Andy learned one thing: flavour is everything. Between the long shifts, he tried every coffee, but honestly? He just kept missing the bold, strong taste of a real street-side Vietnamese Phin.

At The Phinist, we apply the same discipline to our beans as we do to a signature dish. For us, the rule is simple: if the quality isn’t there, we don’t serve it.

We partner directly with award-winning roasters in Vietnam - experts who have spent decades mastering the specific fire needed to reveal the deep undertones of premium Robusta and Arabica. While others follow a standard industrial profile, we choose to preserve the authentic Vietnamese soul in every roast.

Mastering the "Sweet Spot": Great coffee isn’t just about roasting - it’s about timing. We import in small, rotating batches every week ensuring each roast is given time to rest, degas and reach you at its peak flavour.
